I’ve mentioned the cook books written by Chetna Maken which focus on Indian cuisine and I’ve come across a marvelous recipe for butternut squash, chickpea and spinach soup.
You’ll need some time to prepare this bad-boy - with roasting the squash and allowing the flavors to simmer; you’re looking at an hour-plus in total.
